新手:ㄟˊ?那大廚你平常都怎麼選食材的呢?

大廚:條件許可的話,我會親自跑一趟食材的產地。去農場摘下最新鮮的菜葉、或者直接跟農夫買肉回家烹調,確認口感、味道都是最好的,才會持續合作。

新手:ㄚˊ~一定要去產地嗎?

大廚:有機會的話當然要啊!這樣才有機會觀察耕種或畜養的環境,確保食材都是在安全、友善的環境下生產的,還可以和農夫們聊聊他們的理念。

新手:那我都是去菜市場或超市買耶!有什麼方法可以挑到好食材嗎?

大廚:嗯~你看左邊那個小攤位,不只賣蔬菜、海鮮和肉類,還有三個標章——臺灣豬標章、CAS臺灣優良農產品證明、以及TAP產銷履歷農產品,它們都是由臺灣農業部核可驗證機構頒發的標章,代表這些食材的來源、生產或加工過程,都有經過國家的嚴格把關,安全、衛生又新鮮。

新手:這是個好方法欸!我以後去買菜,一定要仔細看看。

大廚:太好了!不然……你要是真的對產地有興趣,下次我去的時候,帶你一起去看看吧?

Chef: The meat is really fresh, so it tastes great no matter how you cook it!

Beginner Cook: How do you usually choose your ingredients?

Chef: If I'm able to, I like to personally visit their place of origin. I pick the freshest greens at the farm and buy meat directly from the farmers. I make sure the food tastes and smells the very best, and then I continue building a relationship with these farmers.

Beginner Cook: Whoa... Do you really go all the way to the source?

Chef: If I have the chance, of course! That way, I can observe firsthand where the crops are grown and where the livestock are raised. I can make sure that the ingredients are produced in a safe, friendly environment. Plus, I can chat with the farmers and learn from them.

Beginner Cook: I usually buy my groceries from a street vendor or at a supermarket. Do you have any tips for picking good ingredients?

Chef: Hmm... Do you see that small stall on the left? They don't just sell vegetables, seafood, and meat; they also have three notable certification labels: Taiwan Pork Certification, the CAS (or Certified Agricultural Standards), and finally, the TAP (or Traceable Agricultural Products). These are all verified by organizations approved by Taiwan's Ministry of Agriculture. They ensure that the origin, production, and/or processing of the ingredients on sale have all gone through strict inspections at the national level, so they're safe, clean and fresh!

Beginner Cook: What a great tip! From now on when I go grocery shopping, I'll definitely look out for those certifications!

Chef: Excellent! If you're really interested in going straight to the source, would you like to go with me next time and see for yourself?

シェフ:条件が許せば、一度自分の足で直接産地まで行きます。畑へ行って新鮮な野菜を摘み、畜産農家から直接肉を買って、家で料理してみるんです。実際に調理してその食材の食感や味を確かめてから、仕入れ契約を結んでいます。

新人:あの~絶対産地まで行かないとだめですか?

シェフ:もちろんチャンスがあれば行きますよ。そうすることで、農作物や家畜が育てられる環境を視察できるし、食材の原料が安全で優しい環境で生産されていることを確認できるんです。それに、農家の方々と、彼らの理念について、話もできますからね。

新人:私は市場やスーパーで買っているのですが、良い食材を見分ける方法はありますか?

シェフ:そうですね~あの左側の店を見てください。野菜、魚介類、肉類を販売していますが、他に台湾豚肉、台湾優良農産物認証CAS、TAP農産物(トレーサビりリティ)の3つのラベルが貼ってありますね。これらのラベルは台湾農業部が認可した認証機関で発行されたものです。つまりこれらの食材は供給元、生産及び加工過程が国家によって厳しく管理されたもので、安全で衛生的かつ新鮮であることを証明しているのです。

新人:なるほど。これは良い指標になりますね!これから食材を買うときは、必ず注意して見るようにします。

シェフ:それがいいです。それで、もしあなたが本当に食材の産地に興味があるなら、次回私が行くときに連れて行ってあげましょうか?

新人:はい、お願いします!ぜひ同行させてください!

大約25萬年前人們開始生火來做飯,火可以用來取暖、並嚇阻野獸;人類認識火以後,就進入一個新飲食文化時代,這便是火食時代。

當人類懂得用火之後,熟食的比重逐漸增加,火的使用,首先使腥味很重的魚、肉類變成可口美味的食物,擴大了食物來源,也改變了食物的內部結構,使其更有利於人體吸收,而火又有消毒殺菌的作用,人類的飲食活動從熟食開始。

至於人類究竟甚麼時候開始使用火? 不同的民族有不同的傳說:
1. 古希臘人認為:火是逃離奧林帕斯的叛神者,洩漏給凡人的秘密。
2.達科他的印地安人認為:美洲虎神的爪子不斷抓地而引起了火花。
3. 庫克群島人認為:天神茂伊降臨大地時,將火帶到了庫克群島。
4. 考古學家發現:從北京周口店挖掘出來的北京人洞穴與相關考古文物中,可以推斷五十萬年前的人類已經會用火

新手:大廚~你可以教我怎麼煎出不焦的荷包蛋嗎?

大廚:我猜你是為了讓蛋黃熟一點,結果煎太久,蛋白都焦了,對吧?

新手:唉~對啊……

大廚:這就是「熱怎麼傳」的學問了!在廚房,熱會用三種方式傳遞:傳導、對流、還有輻射。像你煎蛋時,鍋底的熱直接傳給接觸鍋子的蛋白,這叫傳導,所以蛋白最快熟。而且,蛋白大概60°C就會凝固,蛋黃得等到70°C才會熟,所以中間的蛋黃總是慢一拍~

新手:原來是這樣~那什麼是對流?

大廚:想像你在吃火鍋!當鍋底加熱,湯煮滾的時候,熱水往上升,冷水往下沉,整鍋湯就一直流動,這就是熱對流!熱能跟著湯一起跑,讓食材熟得又快又均勻。

新手:哇~原來火鍋裡也有科學喔!

大廚:當然~最後一種是熱輻射,像烤箱上方那條紅紅的加熱管,沒碰到食物但能「隔空加熱」,就像曬太陽一樣。

新手:難怪我站在烤箱前面都覺得好燙!

大廚:沒錯!煎、煮、烤,看起來不一樣,背後都有科學在支撐。想要當料理高手,你得先學會當熱能的指揮官!

Beginner Cook: Chef, can you teach me how to fry an egg without burning it?

Chef: Let me guess—you've been trying to cook the yolk until it's firm, but then you fry it for too long and burn the egg white. Right?

Beginner Cook: Ah..., yeah, exactly!

Chef: Well, you need to know the science behind how heat transfers! In the kitchen, heat gets transferred in three main ways: conduction, convection, and radiation. When you're frying an egg, the heat from the pan directly transfers to the egg white that it's in contact with. That's called conduction, and it's why the egg white cooks the fastest. Plus, egg whites solidify at around 60 degrees Celsius, but yolks only become firm at about 70 degrees, so the yolk always cooks at a little slower pace!

Beginner Cook: Okay, I understand now. So please tell me, what's convection?

Chef: Imagine you're enjoying hotpot. When the bottom of the pot heats up and the soup base begins to boil, hot water rises and cold water sinks. The soup base in the pot is circulating—that's heat convection! The thermal or heat energy moves with the soup, cooking all the ingredients quickly and evenly.

Beginner Cook: Wow, so science can even be found in a hotpot!

Chef: Absolutely! And the last type of heat is radiation. An example is the heating tube, known as a heating element, at the top of an oven. It doesn't touch the food directly, but can apply heat from a distance, just like the sun.

Beginner Cook: No wonder I feel so hot when I stand in front of the oven!

Chef: Exactly! Frying, boiling, and baking all look different, but they're all supported by science. If you want to become an expert cook, you'll need to learn how to be an expert in thermal energy!

新人:シェフ~目玉焼きを焦がさないで作るにはどうしたらいいのですか?

シェフ:ハハ~ン。きっと黄身に火を通そうとして、長く加熱しすぎたのですね。白身が焦げてしまったんでしょ?

新人:はい~その通りです…

シェフ:それは「熱の伝わり方」という学問です!キッチンで使う熱の伝達方法は3種類あります。伝導、対流、輻射の3つで、卵を焼くときに使うのは伝導です。伝導はフライパンの底の熱がフライパンを通して直接卵に伝わるため、約60℃で固まる卵白は70℃で固まる卵黄よりワンテンポ早く火が通るわけです。

新人:なるほど~では対流というのは?

シェフ:鍋を食べているところを想像してみてください! 鍋底が熱せられてスープが沸騰すると、熱いスープが上昇して、冷めたいスープが底に沈み、鍋全体にスープの流れができます。これが対流です!対流は熱が鍋のスープの流れと一緒に移動して伝わるので、材料を素早く均一に調理することができます。

新人:わ~鍋の中にも科学があるんですね!

シェフ:その通りです。さて、最後のタイプは放射です。例えば、オーブンの上にある赤い加熱管で調理するような方法のことを指します。直接食材に触れずに、太陽の日差しを浴びているみたいに、空気を通して食材を温めます。

新人:だから、オーブンの前に立つと熱気を感じるんですね!

シェフ:そうです!揚げる、茹でる、焼く、というのはそれぞれ異なる料理方法ですが、そこにはちゃんとした科学的な裏付けがあるんです。料理の達人になりたければ、まず熱エネルギーを使いこなせなければなりません!

新手:大廚你看~是烤乳豬!我很好奇,火是怎麼把肉變熟的?是靠高溫嗎?

大廚:這樣說也沒錯!明火烤肉屬於「火烹法」,透過火焰產生的輻射熱加熱食材。輻射熱會先逼乾表面水分,再把熱傳到食材內部,讓肉變熟、變軟。這也是烤雞外皮香酥,裡面多汁柔嫩的原因。

新手:那用火煮火鍋或炸雞也是一種火烹法嗎?

大廚:這倒不算~雖然火鍋或炸雞會使用爐火,但中式烹調的技法,是以導熱的方式來做區分,炸雞用的是高溫油,屬於油烹法,可以讓炸雞的外皮酥脆,同時避免烹煮時間過長,導致雞肉太過乾柴的問題。而火鍋用的是水,屬於水烹法,可以讓食材均勻加熱,並且讓味道充分融合。

新手:那那那……ㄟˊ?!大廚你看左邊有好幾個蒸籠,那又是什麼方法呢?

大廚:那是氣烹法,是用高溫水蒸氣加熱,這種方法可以保留食材的原汁原味,而且不會破壞食物的外型,除此之外,你看,它可以一次蒸好多籠,效率也高。

新手:原來是這樣啊!那我最愛吃的鹽焗雞呢?是哪一種烹調技法?

大廚:鹽焗雞,是用「鹽」作為導熱介質,把整隻雞包起來,透過鹽間接導熱,讓雞肉在一定的溫度中煮熟不需要用油、水、或蒸氣,所以是火烹法的一種!想學嗎?

新手:想~大廚教我!

Chef: That's right! This uses the method known as "open-fire cooking." The flames cook the ingredients using radiating heat. First, the heat draws out moisture from the food's surface, and then it transfers heat into the food's interior, cooking the meat and making it tender. That's why roasted chicken has crispy skin on the outside and juicy, tender meat on the inside.

Beginner Cook: So, do hotpot and deep-fried chicken also count as examples of fire cooking?

Chef: Not really. Even though hotpot and fried chicken use a stovetop flame, Chinese cooking methods are categorized by how the heat is conducted. When we fry chicken, we use hot oil, which is an "oil cooking" method. This makes the skin crispy while preventing the chicken from overcooking to the point of becoming dry and tough. Hotpot, on the other hand, uses a "water cooking" method. Using water allows the ingredients to heat evenly and the flavors to fully mix.

Beginner Cook: Oh, hey, Chef, look! Over on the left, there are several steamer baskets. What method is that?

Chef: That's "air cooking." It involves heating the food with steam at a high temperature. This method preserves the original flavor and won't spoil the food's appearance. Plus, as you can see, lots of baskets can be steamed all at once, so it's very efficient!

Beginner Cook: I see! And what about salt-baked chicken? That's my favorite! What kind of cooking technique does that use?

Chef: With salt-baked chicken, salt is the medium that transfers the heat. We encase the whole chicken in salt. Then the heat goes through the salt to cook the chicken indirectly. The meat cooks at a steady temperature without the need for oil, water, or steam. So, technically, it actually uses the "fire cooking" method! Are you interested in learning how to make it?

Beginner Cook: Sure. I'd love to!

Chef: We'll see how well you do!

シェフ:それはちょっと違いますね。鍋も鶏のから揚げもコンロの火を使いますが、中華料理の調理法は何を使って熱を伝えるかで区別されます。ですから鶏のから揚げは高温の油を使う「油調理法」です。衣をパリパリに仕上げ、鶏肉がパサパサにらないように短時間で調理することができます。鍋は水を使用する「水調理法」です。食材を均一に加熱し、個々の食材の風味を掛け合わせて一つにすることができます。

新人:では、では~あれ?シェフ、左側にいくつか蒸し器がかありますね。あれはどんな調理法に使うんですか?

シェフ:「気の調理法」に使います。食材を高温の水蒸気で料理するので、見た目を損なわずに、本来の味をそのまま残すことができます。それに、蒸し器は一度にたくさん重ねて使えるので、効率が高いです。

新人:なるほど!では私の大好きな「丸鶏の塩蒸し焼き」はどの調理法で作るんですか?

シェフ:「丸鶏の塩蒸し焼き」は、油、水、蒸気を使わず、熱伝導媒体に「塩」を使って調理するので「火の調理法」に分類されます。「塩」で鶏肉全体を包み込み、その「塩」を通して間接的に熱を伝導して、鶏肉を一定の温度で調理するんです。作ってみたいですか?

歐美烹調技法始自希臘與羅馬時代,發展迄今主要分為三大類:溼熱法、乾熱法及混合烹調法。

烹調的方法中,若熱能傳遞給食物是藉由液體或水蒸氣,稱為溼熱法。

熱能的傳遞若非以水為媒介,而是藉由熱空氣、熱油、熱金屬或輻射熱來做熱能的傳遞給食物,則稱為乾熱法。

若食物的烹煮同時用到了溼熱法及乾熱法,則稱為混合烹調法。

不同的烹調方式,對食物的加熱烹煮過程及最終成品的展現有著深遠的影響;現今的廚房中,大多數的烹調方式,都同時混合有多種不同的熱能傳遞方式。

大廚:那是冬蔭功,也叫泰國酸辣湯,是泰國很具代表性的湯品。泰國菜經常使用氣味豐富的植物,冬蔭功這道料理,加了香菜、泰國檸檬葉與香茅等植物提升香氣。泰國是熱帶國家,南邊靠海,菜色常常有蝦有魚,口味普遍酸辣開胃,像這道湯就用了魚露、檸檬汁和辣椒。

新手:難怪每次吃泰國菜,都要嗑掉好幾碗飯!後面銀色鍋子裝的是香米,對吧!

大廚:那是泰國人常吃的茉莉香米,也培育出各樣的特色品種,他們非常自豪!

新手:欸大廚~我看到右邊那裡還有義大利料理的展櫃~你快跟我來。

大廚:欸?!

新手:哇~義大利的食物跟亞洲看起來差很多啊!有披薩、千層麵、麵包還有義大利餃。不過顏色看起來都是蕃茄紅,他們很愛番茄嗎?

大廚:義大利菜的醬汁多樣,南方喜歡用番茄紅醬,北方常用奶油白醬,另外還有青醬。主食除了麵包、義大利麵,也有米,會做成燉飯。他們也愛用香草,像是羅勒、迷迭香等等。你有看到後面那罐黃色蓋子的起司粉嗎?

新手:當然~我超愛起司!

大廚:適量的起司能夠讓義大利菜添加風味。旁邊還有其他異國料理,可以慢慢瞭解。哎~擦擦你的口水。

新手:餓了餓了!大廚我要點餐!

Chef: That's a hot-and-sour soup called "Tom Yum Goong"—Thailand's most iconic soup. In Thai cuisine, rich, aromatic plants and herbs are often used. Tom Yum Goong, for example, has cilantro, kaffir lime leaves, and lemongrass to boost its fragrance. Thailand is a tropical country, and in the south, it has long seacoasts, so Thai dishes often have shrimp or fish in them. Sour and spicy flavors are popular, as they help stimulate appetite. This soup, for instance, has fish sauce, lime juice, and chili.

Beginner Cook: No wonder I always stuff myself with rice whenever I have Thai food! And that silver bowl in the back—is that jasmine rice?

Chef: That's right. It's jasmine rice. Thai people usually eat it all the time! They've cultivated several unique varieties that they're quite proud of!

Beginner Cook: Hey, Chef! Over there on the right. I see a display with Italian cuisine! Let's go check it out!

Chef: Huh?!

Beginner Cook: Wow, Italian food looks so different from Asian food! There's pizza, lasagna, bread, and ravioli. But the colors all seem to be tomato-red. They really love tomatoes, don't they?

Chef: Italian cuisine uses all kinds of sauces. In the south, red tomato-based sauces are typically used, but food from the north is often characterized by the use creamy white sauces. And we can't forget the green sauce "pesto." The staples of Italian cuisine are bread, pasta, and also rice, which is used to make risotto. In general, Italians love herbs such as basil and rosemary, as well. Do you see that jar of cheese powder in the back, with the yellow lid?

Beginner Cook: Of course! I love cheese!

Chef: Just the right amount of cheese can really enhance the flavor of Italian dishes. In this area, you'll also find cuisines from other countries. Take your time exploring them. Oh...and wipe the drool off your chin!

Beginner Cook: I'm so hungry, Chef! I'm ready to order a meal!

新人:奥の皿にミニトマトが入っているのは青パパイヤの千切りだと分かりますが、手前の真っ赤なスープは何ですか?トマト、エビ、それにパクチーが入っているみたいですが。

シェフ:それはトムヤンクンです。タイの酸辣湯ともいわれる、タイを代表するスープです。タイ料理では味の引き立て役によく香味野菜を使います。トムヤムクンは、独特の香りが特徴のパクチー、タイライムの葉、レモングラスを使った料理です。タイは南が海に面した熱帯の国なので、料理にはエビや魚がよく使われ、味は全体的にスパイシーで酸味があり、食欲をそそります。たとえば、このスープにはナンプラー、レモン汁、唐辛子が使われています。

新人:なるほど。だからタイ料理を食べると、いつもご飯を何杯もお代わりしてしまうんですね。納得です!ところで、奥の銀色の器には、ジャスミンライスが入っているのかしら?

シェフ:はい。タイの人がよく食べるジャスミンライスです。ジャスミンライスは品種が豊富で、タイご自慢のお米だそうです。

新人:シェフ、右側にイタリア料理の陳列ケースがありますね~はやく行きましょう。

シェフ:なあに?!

新人:わぁ~イタリア料理はアジア料理と全然違うんですね!ピザ、ラザニア、パン、ラビオリもあります。でも、全部トマトの赤に見えます。イタリア人はトマトが大好きなのかしら?

シェフ:イタリア料理には、いろいろなソースがあります。南部では赤いトマトソース、北部では白いクリームソースがよく使われます。でも、緑のソースを使う場合もありますよ。主食にはパンやパスタのほかに、リゾットで使う米も食べられます。イタリア料理にはバジルやローズマリーなどのハーブが好んでよく使われますが、後ろの黄色い蓋が付いたチーズパウダーの缶に気が付きましたか?

新人:もちろんです。チーズは私の大好物です。

シェフ:イタリア料理ではチーズも風味を加えるのによく使います。お隣にいろいろな国のエキゾチックな料理があります。ゆっくり学ぶことができますよ。はいはい、唾を拭いてください!

新手:這是我第N次煎牛排失敗了!我想要外皮焦香、吃下去會爆汁的牛排!

大廚:來來來,往右走一步,看到前面圓形的紫色展版了嗎?

新手:有,上面寫著碳水化合物、水、油脂、和蛋白質。

大廚:這些是食物的基本成分,它們遇熱會產生不同的變化,影響口感和氣味。例如,煎牛排時,加熱會讓牛排中的水分逐漸釋出,但如果水分流失太多,肉質就會變得乾柴、口感也比較差。

新手:可是……煎太久會乾,煎不夠又怕太生,也沒香味。

大廚:不同的溫度或加熱方式,都會影響每種肉類蛋白質煮熟的程度。如果你擔心牛排太生,或是想知道熟了沒,可以學我們廚師,用料理溫度計測試牛排中心溫度,來判斷合適的熟度。

新手:哇!這方法好欸!我來試試。

大廚:另外,如果你想要追求香味,煎牛排的香氣,是來自高溫加熱碳水化合物和蛋白質的時候,共同產生的梅納反應,所以鍋子燒熱了再放牛排,煎出表面的深褐色,就可以很香。

新手:那……牛排切開紅紅的,還會流血水,是不是沒熟?

大廚:那不是血,是牛肉裡的蛋白質,經過加熱會變成粉紅色或淡褐色。不過豬肉和雞肉就要全熟才安全。

新手:原來是這樣啊!

大廚:這邊還有其他食物成份的說明,慢慢研究,你也會變大廚。

Chef: Let me show you! Take a step to the right. Do you see that round, purple display panel in front of you?

Beginner Cook: Yes. It says carbohydrates, water, fat, and protein.

Chef: These are the basic components of food. When they're heated, they change in different ways, and that affects both the flavor and the aroma of the food. For example, when you fry a steak, the heat gradually releases the water content of the steak, but if too much water is lost, the meat becomes dry and tough—far from an appealing texture.

Beginner Cook: But... if I fry it for too long, it gets dry, and if I don't fry it long enough, it stays uncooked and won't have any flavor.

Chef: Different temperatures and heating methods determine how well-done the protein in different kinds of meat becomes. If you're worried about your steak being too rare, or if you want to know whether it's done or not, you can do what our chefs do: use a food thermometer to check the internal temperature at the center of the steak to find the right level of doneness.

吃牛排時若你不敢吃太生的怎麼辦?可用手掌來判斷肉的熟度。首先舉起左手,在放鬆的情況將4隻手指分別與大拇指相觸,接著用右手按壓大拇指下方的肌肉,以每隻手指頭按壓都會有不同的觸感,由軟到硬分別代表幾分熟度,像是大拇指就是最軟嫩、只有一分熟,以此類推,小指按壓時觸感最硬,也就是全熟的硬度。

大廚:是的,而且如果內鍋直接接觸外鍋,還有熱傳導的效果。電鍋加熱大概是100度上下,沒什麼火侯控制的技術性問題,用來煮飯、蒸包子、蒸魚或煮湯都很方便。那你最少用的鍋子是哪一個?

新手:嗯……應該是左邊這個烏漆抹黑的陶鍋。

大廚:陶鍋的特點是蓄熱效果一極棒,但是導熱能力很差,正因為這樣的特性,特別適合需要細火慢燉的料理。當我們滷肉或燉湯的時候,陶鍋會先儲存大量的熱,再慢慢地而且很均勻地傳給食材。經過長時間的燉煮,各種味道可以互相融合,醬汁濃稠,肉的口感軟嫩入味,而且還不容易燒焦。
